“Carbs are our bodies preferred energy source”? Where did you hear that BS? Our body is always looking to conserve energy, sure. Including during sleep, because the carbs would have been used up after a meal. If what you were saying was true we’d suffer brain death anytime we fasted. The body manufactures glucose from protein to supply the brains energy needs. Our body can create glucose via a process called glycogenesis. Any vitamin content in carbs is added in the manufacturing process. Read a package, flour needs vitamins to be added. Most vitamins are available in meat and in nuts. There is no such thing as an “essential carb”.

Extreme claims like that require some serious evidence to back them up. You made some very specific claims about carbs being over-consumed and reducing our life expectancy. You still haven’t addressed your proof of carbs being unhealthy. That doesn’t mean that eating any more than the minimum is harmful, in fact we should be getting more than the minimum for all three macronutrients. We can also live with very minimal fat or protein intake, so long as the basic essentials are met.

The fact that we can manage to live with very minimal (but not 0) carb intake is irrelevant. Fruits, vegetables, whole grains and legumes all help decrease our risk of diseases and improve our nutrient intake. They’re quite an important part of a healthy diet.

Carbohydrates are the body’s preferred energy source, the brain requires them to function, our muscles store glycogen for explosive energy. But to go with that for a moment, there are a variety of vitamins and minerals we need, alongside fiber, which are found primarily in carb containing foods. Well first, I didn’t say anything about carbs being essential, so that just came out of nowhere.
